Zucchini Pie

My awesome neighbour and friend G shared a zucchini pie recipe with me today, and now it's my turn to share it with you! Since I still have zucchini left from our garden what a better way to eat it by trying something new?! And I love to try new foods, he-he... :)
So here it goes:
G's zucchini pie, yum!

Ingredients (and prep):
* 4 cups of sliced zucchini (don't peel it)
* 1 medium onion, chopped
* 1 tbsp of garlic (I cheated a little bit and used dried garlic bits rather than bother with peeling and chopping garlic cloves)
* 1 cups of roughly chopped red bell peppers
* 1 cup of feta cheese (mine was one whole piece in brine, which I sliced into chunks, but you can probably use feta that's already crumbled)
* 3 eggs
* 2 tbsp of butter
* 2 tbsp of chopped parsley
* salt and pepper
* pie crust (you can use store-bought, but I ran over to Ghislaine's house and she showed me how to make the crust!)
* 2-3 tsp of Dijon mustard

Directions:
1. Sautee onions and garlic in butter for about 5 minutes.

2. Add zucchini and red peppers and sautee for another 5 minutes. Set aside.

3. Line a deep pie dish with your pie crust. Brush it with mustard.

4. Stir in eggs, feta cheese, parsley, salt and pepper. Add into your zucchini mix.

5. Pour the above mixture into the pie crust. Preheat the oven and bake at 400F for about 30-35 minutes.

6. Let it cool and enjoy! :)

P.S. My hubby is not a big fan of eggs. And when I say that, I mean he actually hates them! But he gave this pie a try (which kind of reminded me of a sort of a quiche) and he LIKED it, which is saying a lot!!! So this recipe is definitely a keeper. Thank you G! :)
